I need to undelete a quiz as well. The link does not work.

1. Go to your Home Page. 
2. At the end of the URL, add /undelete   (use small letters)
3. You should see a list of items that you have deleted. Hopefully you can find your missing quiz and restore it.

I'm not sure if the link that @bneporadny had originally provided back in April 2020 is still available here in the Community (the link doesn't work because it is pointing to content in the old Canvas Community interface), but one that I commonly point folks to is called Undeleting things in Canvas.  This should get you the information you need, and it's very similar to what @SusanNiemeyer provided in her response.  Hope it helps a bit!
