The Instructure Community will enter a read-only state on November 22, 2025 as we prepare to migrate to our new Community platform in early December.

From what I understand, you don't set the time in the conference itself. You would let your participants know what time you will be holding the conference, and they will only be able to get in once you start it manually.

I know this is an older question, but the 15 Oct 2022 Canvas release includes a new option in Conferences when using BigBlueButton: Add to Calendar. This will create a new Calendar Event at a specific date / time with a link the the video conference.
However, I don't know that this restricts participation in the BBB conference to that date / time window.
