I am trying to set up our new school year in Canvas. I set up the new School Term, but every time i go to the start page, I see all the courses from last year (unless I use the Filter option to show the 2016-2017 school year). I want everyone to default to the new school year term and not have to filter. ( I have the term starting today--just in case the view is date-driven)
Can you please tell me where I set this? Also, is there any kind of documentation on how to set up the new school year? (we are manually adding classes and teachers are creating their rosters)

I could be misunderstanding the question, or your setup could be a little different from mine (I'm in higher ed), but when you say you see "all the courses from last year" unless you filter, if you are looking at the main account page as an admin you will see all courses from all terms by default. Your teachers should only see the classes they are assigned to, on their dashboard or course list. That said, they will have to adjust their favorites for the dashboard to show courses for the new school year, but that's something they do individually, not something you can globally adjust.
To expand on what @tdelillo said, if your courses are using start and end dates, they should automatically get pushed into the "Past Enrollments" category when the course is over.
This will allow the Dashboard view to automatically update the tiles with current courses.
With respect to the Admin view, I understand what you are saying, but I am not aware of any way to tell Canvas to default to the current semester. I have always had to filter. However, I am fully integrated to the SIS and do not manually create courses so it is not an issue for us. If I have to use the Admin view it is usually to lookup a specific course.
If you have a "student information system" I highly recommend integration to automatically create courses and rosters.
We are giving the Canvas Admins area a little bit of love (especially questions that are really, really old) and just want to check in with you. This will also bring this question new attention.
