I cannot hide grades the same way I did last year. The function doesn't seem to be available until I enter a grade (tells me there are no grade to hide). Once I enter a grade I can "hide grades", but I move to the next student and the process seems to repeat - almost as if grades must be hid on a student-to-student basis and only after the grade is entered. In all cases it seems students are being notified of comments whether the grades are hidden or not.
Was there some change that has occurred in the software? I'd really like to be able t o work through all grades and comments before sharing anything with students.

This is because Canvas' New Gradebook became the only gradebook on January 18, 2020. The New Gradebook employs a "Grade Posting Policy" instead of Mute/Unmute. You can learn more at.....

So How do I unhide grades if I hid them inadvertently?

And here is the pertinent excerpt..........
When you are ready to make grades visible to students, you can post grades and/or submission comments for a specific assignment. You can post grades for everyone in the course [1], or you can post only grades for graded submissions [2].
When you post grades for everyone, ungraded submissions display no grade.
When you post grades for graded submissions and/or submission comments, any ungraded assignment grades that are updated later will remain hidden until manually posted.
If you make updates to posted grades, students can view these updates and, depending on their notification settings, may receive a grade-change notification.

We no longer have the option of checking "Everyone" or "Graded" as in the photo Kelley posted above - it simply lets you hide one grade at a time (and it takes forever after you make a change, even though it should be instantaneous, making this option unworkable). What is even the point of having this option here? I'd rather just use the "posting policy" option, but you can't access that from the speed grader, which is really frustrating.

I am not sure what is happening in your specific case. I just checked one of my courses, and I still have the post for everyone or graded as shown above. I do not have a listing for a specific student. Also, I do not see something like that mentioned in my Feature Options that can be turned on or off.
My best guess is that it may be something that your particular institution implemented. I would reach out to your Canvas admins to see if it is something they did or something they can help you with.
