I have a (old-style) quiz that my students took. There is a 0pt question on the quiz that is "essay" format. The grades won't show until I manually score each of these as a 0 instead of a --, which is unfortunate, but whatever.
My question is how do these quizzes factor into the students' grade? Do these "ungraded" quizzes "just work", or is there some kind of terrible failure mode? For example, if a student earns 10/10 on the quiz, but still has the 0pt essay ungraded, does this quiz still get averaged into their grade, or does it not average, or does it count as a 0, or some other thing that I haven't imagined? What happens here?

I just double-checked this behavior, and am seeing the same thing. There was a "Treat ungraded as zero" option in the grade book, but the updated grade book does not have that, and it looks like--contrary to what I remember--the current behavior appears to be to include the points for automatically graded questions, but to award 0 points for those questions waiting to be graded.
Here is what happens with one automatically graded question and one manually graded question which has not been graded:

Until the attempt is graded, it is not included in the overall course grade. It is just as if the student has not attempted the quiz yet.
Is it included in any of the "extra" grade fields? When you export, there's a "final posted" and a "final unposted" and some other stuff.
I reopened a bunch of old stuff so ppl could catch up. I can't feasibly go back and manually click useless buttons literally tens of thousands of times b4 grades are due....
Also, I have a restAPI token. Is there a way to make this happen using the restAPI endpoints?
I also have the same question. I just waiting for the right answer.
Has this possibly changed in the past couple of days? I have a faculty who has reported that ungraded quizzes (classic) ARE counting towards the final grade total... and students are concerned that their grade % has dropped. I verified this in her course, and have also tested in a sandbox shell and am seeing the same thing. I've opened a support ticket, but I don't recall this ever being the case?

Right, and thank you for the response/confirmation... and unfortunately this seems to be a recent change that has caused a lot of concern because it's changed the student's view of their grade calculation mid-semester (near end).
Instructure has confirmed this to us as a bug and has escalated it to engineers.
Follow-up 4/29 afternoon.... Instructure has resolved this issue, and we are no longer experiencing this errant behavior.

Yes I am having the same problem, which just started recently. I have a group of 10 quizzes all worth 7 points each, but I have not graded 2 of them and the Ungraded icon shows up in the Gradebook. However, students are still being graded out of 70 total points, so the 2 ungraded quizzes are being treated as if they are 0's. In the past students would have been graded out of 56 total until I graded the last 2 quizzes. I didn't even realize it was doing this until two students emailed me last night.
The "grade export" document at https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-export-grades-in-the-Gradebook/ta-p/809 described what each of the different exported "grade" columns include. However, there are no options that include partial scores for assignments that have been submitted but not graded.
As for doing the grading via API, it might be possible using https://canvas.instructure.com/doc/api/quiz_submissions.html#method.quizzes/quiz_submissions_api.upd... but that's definitely not my area of expertise.
