Why can't we see grade distribution graphs from students in "Test student" mode? This is a serious oversight for instructors not to be able to view what their students can see.

I understand this is a byproduct of not including test student's grades in the averages (which of course makes sense), but it does mean instructors are not really seeing what the students are seeing, which is a real problem for testing and understanding things.

Yes, this is a major oversight, I totally agree.  "Student view" is not really student view...
