@robinsra, I'm guessing your institution uses New Quizzes, which did indeed have an abrupt workflow change this past weekend. Did you see the following statement which was added to Canvas Release Notes (2021-03-20) on March 22?
Workflow Change Note: For instructors, clicking a New Quizzes title will now always open the Assignment Details page for the quiz, so that availability adjustments can be made faster.
Since then, we've been advising our teachers, TAs and designers working with New Quizzes that they must save the assignment due and availability dates for a quiz before the editing features -- Build, Settings, Reports, Moderate, and Preview -- will appear.
- TIP: If working with a copy of a New Quiz from a past course, it's fine to remove the due and availability dates and then press Save. Fill in updated dates later when you are ready to Save & Publish.
I agree with you that there should have been more testing and advance notice. A few Community members have been suggesting what they'd like to see improved in this Idea Conversation:
