Is there any way to print a log of students that you message through the gradebook who have not submitted assignments?

I'm not sure if this will completely meet your needs, but in New Analytics, there is a "Missing Assignments" report that you can run that gives you the following: "This report will produce a list of assignments that have not been submitted yet."  Refer to How do I view and download reports in New Analytic... - Canvas Community for more details.

In our case, we don't need another list of the students who didn't complete something. What we're really wanting is a receipt or record somewhere that the message was sent out.

For instance, if I have TAs in my course and one of them sends a message through the gradebook to everyone who hasn't yet submitted their work, there is no way for other TAs or myself as the Instructor to know that this message went out at all. No log, no copy of the communication in my Inbox - nothing. I don't even really know for sure after sending that message whether students received it or not.
