When you first set up your quiz (just like any assignment), you will be able to enter the time that the quiz is available there in the "Details" section.
This information applies to New Quizzes. Just in case you are referring to a timed quiz, you can select the amount of time there also when you actually build your quiz. This will be in the "Settings" area of the quiz itself.
