Default User Defined Fields

Is there anyway to edit the default user defined fields when someone is registering for an account.  The problem that I am having is if a parent is registering their child for a course, when they initially register for an account, they input their First Name and Last Name instead of the student that will be enrolled in the course.  How I fix this now, is I go into the course on Canvas and change the name to the student.  I would also love to see user defined fields for account creation and separate user defined fields for course enrollment.
