When creating an issuer in Canvas Credentials, the issuer's email address automatically is set to the email of the admin user creating the issuer. This email field should be editable (as a text box), allowing admins to enter the appropriate generic email contact address for that issuer. This avoid needing to create a throwaway account to create the issuer and allows admins to create issuers as needed across the organization.
Change the "email" field when creating an issuer in Canvas credentials to be a editable textbox instead of a limited dropdown.
