How many courses am I able to view at one time in the Parent app for Android?

I believe that you should be able to view 10 courses by default. 

THIS guide doesn't exactly address the mobile app, but it does say that "By default, the first 10 course and group calendars will be selected and appear in the calendar view."

This is correct! In the Canvas Parent app, there is a small "Calendars" text right above the week's dates that will open a menu. Here, the app user can check/select the calendars they want to include in the tab. This window also says Tap to favorite the courses you want to see on the Calendar. Select up to 10.
