Hi there!
We frequently have Students in multiple sections of the same course. For example, we have an "Internship" course, and students are allowed to be in two or more internships, which result in being in INT101-01, INT101-02, etc...
To make things easier for the instructor, we Cross-list all of the Internship courses into one course to make it easier to grade--instead of having her jump into 60+ courses, each with one student.
The issue is when a student who is in 3 Internships and all cross-listed into the same course, the Gradebook seemingly only allows one grade for all three sections. Is there a way to give three separate grades in this cross-listed course, or do we need to un-cross-list those few students who are in more than one Internship so we can actually give them separate grades?

What you are trying to do is not possible.
What could be done is to have as many assignment groups as needed in the course. In each assignment group there would (most likely) be multiple assignments.
As the instructor awards points for each internship and its assignment(s) (even if a student is in multiple), the columns of the gradebook on the far-right will calculate a value for the assignments in that specific assignment group (for each internship). This means that if a student is in three internships, it would be possible to see their grades in each assignment group that they had grades given in.
I am not sure if I explained that well but I hope that what I said makes some sense.
