Hi there, @359111 ...
When you are on your "Courses" >> "All Courses" screen, you can only mark a course as a "favorite" (with a yellow/orange star) if the course is "active". You cannot "favorite" courses that are no longer "active". The "active" status will depend on when your semester/term stars and when your instructor has "published" the course. You can hover your mouse cursor over a star to get additional information about it. Additional information about this can be found at: How do I customize my Courses list?.
I hope this helps to provide clarity on this for you. Sing out if you have any questions...thanks!
@359111 ,
I thought I'd add on here, too in addition to the information provided by Chris.
Courses that appear in your Future Enrollments aren't active courses. Active courses are courses that are running during the current term you're in, and those are controlled by start and end dates defined by your Canvas administrator. In your case, it appears that your Canvas Admin doesn't permit students to access the courses directly that you can see in your Future Enrollments. Once the start date for the course begins, the course will automatically move to your active enrollments and you'll be able to star it off (if it doesn't by default appear on your dashboard), as well as being able to access it.
Does that make more sense? I hope this helps!

Hello Chris _ Hofer,
I guess what I am meaning is my "future enrollment" shows that some of those classes are "active" under the "published section". When I go over to the star, it says, " I cannot add this course to the courses menu unless this course is active".

Like my Spring Semester classes are not showing up, even though it is saying they are active.
