I need to upload grades from an Excel spreadsheet to the Canvas gradebook. However, the spreadsheet list of students is larger than the Canvas gradebook list. Can I still use the upload operation in Canvas? i.e. will the Canvas upload operation match names /IDs with the Excel list before copying the grades? Or will I need to make sure the roster list in the Excel spreadsheet matches exactly (and in the same order as) the Canvas gradebook roster before using the upload operation?

I recommend you review the import grade guide very carefully. In my opinion, what you suggest won't work very well. I think it would be best to export a csv file of your gradebook from your course, add the grades to that file, then upload that same file.
I'm not sure what will happen if you have extra students in the list. But It won't add those students to your course roster. It may just ignore those rows, or it may reject your entire file.

You could try this in your beta environment first, to see what happens.
