Thank you for contacting the Canvas Community. We're sorry to hear you've been experiencing issues with formatted text in the RCE. Thank you for explaining the situation. Currently, there isn't any update or plan to release a feature for "paste without formatting" but we understand why you want want and need it. It is certainly a good idea and one you can look for with releases:

Besides that, you could try pasting first to notes or TextEdit etc. to get the text to a neutral state instead of pasting directly from Word. Additionally, the things you mentioned are certainly abnormal behavior and shouldn't be disappearing from view. It is likely your internet browser and we recommend clearing the cache and cookies or trying another browser.
In Chrome
On your computer, open Chrome.
At the top right, click the three dots
Click settings
On the left, choose Privacy and Security
Then, clear browsing data
At the top, choose a time range. To delete everything, select All time. I suggest at least 4 weeks
Next to "Cookies and other site data" and "Cached images and files," check the boxes.
Click Clear data.
If these things are still disappearing and coming back, it may be best to contact canvas support directly.
