Hi, I am wondering how am I able to create a course? 
It is not an option on my dashboard?

Many organizations disable instructors' ability to create new courses on their own, so if you're not seeing that option on your dashboard, most likely the local Canvas admin reserves the right to create courses. Please reach out to them to request a course shell.

If this guide‌ (https://community.canvaslms.com/docs/DOC-12819-415241327 ) doesn't help and allow you to create a new course it may be because your institution has removed the ability for instructors to create new courses on their own and you will need to contact your Canvas Administrators for assistance in getting a new course created.
