Do the instructions at https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-delete-a-course-as-an-instructor/ta-p/1... not work?
If you don't see an option to delete the course, your Canvas admin may have set the permissions to not allow instructors to delete their courses. You would want to contact the admin.
