I accidentally used the default "100%" for the missing submission policy, when I had intended to give 0%. Now I can't figure out how to undo/change to 0%, as the new missing submission policy won't overwrite already graded missing assignments (and the previously policy already "graded" all the missing assignments to 100%).
Does anyone have advice on how to undo this change, or simply replace all the missing assignment grades with a 0?

You should be able to click on the Set Default Grade button, add a 0 in the box and overwrite already graded submissions.
But wouldn't this change all the grades to 0, including the correctly graded non-missing submissions?
Oh I see. You will have to manually assign the new grade for those students. I would Filter each student that needs the change and add their name in the Student Name Filter tool. Then apply a new override default grade for those students.
I thought that using Enhanced Gradebook Filters might be helpful as it has options to show students without submissions, but I did some testing was unable to show students with grades and without submissions.
