How do I make grading transparent to each student in Canvas, with possible course points and percentage of possible points for each student throughout the course?

I am not sure I completely understand what you are asking.  Students are aware of how many points assignments are worth.  they are also aware of percentage weights for assignment groups (if they are being used).  I would think that all the information you mention is available to the students.  Or is there something else that you are trying to ask?
