Can I create an etextbook in Canvas and use it for my course? If not, in what program can I create an etextbook that I can then import into Canvas?
Ideally I want to create 1 etextbook that works across platforms e.g. kIndle, canvas and that can then be used for my course.

You could use your Canvas Course iteslf to create an etext- once you restrict content to canvas pages and assignments with no attached files. Then if your institution allows you can download this as an epub:
In Apples Pages you can publish a pages document to Apple Books or on a PC here are some options:
