A similar question was asked but the response did not tell how to delete a response totally so it will not mess up the grade.

Hi @Kellysl
By "student response", are you talking about a discussion post, or an assignment submission, or a quiz attempt?
You can allow for additional submissions on an assignment or quiz, but there is no option to completely delete submissions that have already been made.
As instructor you can choose to completely exempt a student from a particular assignment by marking the status as "Excused", and that will prevent the submission from being counted toward their grade.
