This has been an ongoing problem: I make comments on student assignments, or make a comment in the "Comments" box, but many students never look at them. I've posted on Canvas and in my Syllabus a step-by-step guide for them to view my comments, but still they don't, and it's creating major problems for them. And me.
Is there any way for me to be automatically notified by Canvas when a student has viewed their assignment (and at least theoretically, has seen my comments)?

Nothing that I'm aware of that would notify you if someone "viewed" your comments. On your user "Notifications" screen, there is a "Submission Comment" row, and that is for "Assignment submission comment". That probably as close as you'll get, though.

Have you considered using the reassign option? It may not work with your course flow, but I thought it was worth a mention.
