I've noticed that whenever I copy a course from a previous semester and adjust the assignment dates to match the current term, all assignments for the new student roster automatically receive a grade of zero. I then have to manually delete these zeroes, which is tedious and time-consuming.
To prevent this, I’ve tried disabling the auto-zero feature before updating the dates, but the issue persists.
Has anyone else experienced this? If so, how do you handle it?
To fix the issue after the 0s already were filled in, I recommend exporting the grades, deleting the 0s in Excel (or your favorite spreadsheet editor) and then importing the grades back to Canvas. That can be a lot easier than deleting N*Q zeroes (where N is the number of students and Q the number of quizzes).
Before the issue happens, have you tried shifting the assignment due dates on the import page?

As @Gabriel33 mentioned, are you shifting or removing the due dates upon doing the import? If not, then the gradebook is seeing that the assignments as Late. It might even be pulling in that Late Policy setting when you import the course (?? maybe try removing the Late Policy before doing the import? )

We advise instructors to uncheck the "apply zeroes" box in the gradebook before importing into a new course. We also occasionally have to set the default score to "space" to wipe out those zeros if mistakes happen. 🙂 Shifting the due dates ahead of time, as already mentioned, helps avoid these issues.
