Has anyone used Canvas to allow Faculty and/or Administrators track minute equivalencies? For example, if instructional activities have been assigned minutes, how would you track them to make sure online courses are in compliance.
Any suggestions are appreciated.

This would be difficult to do with Canvas itself. We created a Time on Task Calculator for faculty teaching 100% online to use during the design process. They would choose their activities and the calculator would show them approximately how many minutes were needed for students on each one. The total would aggregate for the course. We used a Google Sheet for this. Also, it helps faculty to see how the online course minutes may differ from what is required in a FTF course.
