In the Module Knowledge Checks, instead of providing the answer to the Live Class Presentation Knowledge Checks, it should only be in the Instructor's deck, instead of the students to force a stronger understanding of the material

This seems like a question you would need to address to the instructor of this course at UCF.  Unfortunately, we do not have access to UCF's Canvas environment or any of their courses.  If you click on the "Help" icon on the far left-hand global navigation menu, you'll find an option in the slide-out that appears to "Ask Your Instructor a Question".  If you are unable to contact your instructor, you might try reaching out to UCF's Online Learning / eLearning / Distance Education team.  They might be able to provide some additional guidance for you.

I definitely see the use case for having different decks available for the instructor and students, and/or not allowing students to skip ahead.

However, a possible workaround would be for the instructor to circle the correct answer on the slide during the presentation. The visual feedback of seeing the correct answer indicated is probably valuable enough that having the instructor annotate it is worthwhile, instead of just saying the answer.
