Moving a class to a new instructor in Aeries SIS

We have a teacher who is leaving for good mid-semester. We need to move all of the classes, grades, assignments, etc.. to the new instructor. We did this once before and must have done something wrong. As soon a we dropped the old teacher from the classes, everything was lost. How do we keep kids, grades, assignments, etc. there and just make someone else the instructor of the classes?

Here is what happens in our situation -- when the teacher leaves, they (and all their students) get removed from the course.  But the course remains in Canvas.  You can't search for the course by Teacher because the teacher is no longer enrolled, but you can find it by course Name (or even course code).  The course will be empty of enrollments, but all the content remains.

When the new teacher is assigned a course in the SIS and that course is assigned the students, a new course (blank) course gets created.  

What we do is we "crosslist" (move) the section(s) of enrollments over to the original course.  (NOTE:  A System Admin would need to do the crosslisting since only they will be able to find the course with no enrollments).  This allows the new teacher to have access to all the original content; the students get reconnected to their submissions, grades, feedback -- once in a while a little info gets "lost" but nothing major.   Any Announcements the original teacher made or Discussions replied the original teacher posted will not have their name (it might say Anonymous, maybe, I don't recall).

The new teacher may need to go to Settings and edit the course name to reflect the new teacher, and maybe info on the home page, the syllabus, etc...
