I am taking the place of a colleague who has decided to retire. May I change the email and user name?

The short answer is "No", and the long answer is that you should not! Bad security practice.

Have your Canvas Admin add you as a user to Canvas (if this hasn't already been done), then have them enroll you as the teacher-of-record in the course.
