Resuming a quiz that has been submitted and closed?

An instructor would like to grant a student additional time to finish a quiz, but the quiz has already closed and the results submitted to the Gradebook. We can grant the student an additional attempt via "Moderate this Quiz" and assign them another window of time for that second attempt, but the instructor would like for the student to be able to pick up where they left off and not have to start from scratch. I don't think there is a way to do that once the due date has passed and the results have been submitted, but maybe I'm missing something in the instructor guides. Would it be possible for a student to resume a quiz under these considerations?

Unfortunately, once a quiz has been submitted it cannot be resumed. One option for future quizzes could be the Build on last attempt option for New Quizzes. In Settings under Allow multiple attempts you can select Enable build on last attempt. This should allow students to retake the quiz after submitting and only have to answer the questions they incorrectly answered in the previous attempts.
