Save Quizzes as a .pdf for a concluded course

Hi - I recently concluded a course and have now been notified that I need to save each quiz (with full question detail, i.e., the correct answer and what students see when they answer incorrectly) for purposes of submitting evidence to CACREP. In the following instructional videos and searching for answers here, I suspect none of the solutions can be employed (as it is a concluded course). What are my options at this point (so I can avoid cut & paste for every quiz and answer)?
