I'm posting some video quizzes for my students and planning on turning on the "no seeking forward" option. If a student goes back to watch the video a second time at a later date, will Canvas remember that they have watched it already and allow them to seek anywhere in the video?

To answer your question, yes. After they take the quiz and click on "Done" at the end, then they should be able to scrub forward without that constraint. Hopefully, that will solve your issue, but let us know if you need anything else.
