What do the different "Display grade as" options do?

I can't find anything "official" about these different options in the grade book. I have a particular situation now, but may have a different one later, and I'd like to know what these do; how do they behave differently from one another?

If I want my students not to see their grade on an assignment, not to see it until a pre-established time, not to see it until I manually release it, or see it immediately, which option should I choose for each result? What are the other "features" of the different options?

Hi,  @lglen . I remember Bellingham fondly from a visit to Linux Fest Northwest some years ago! What you describe sounds like posting policies and you can find much more information about that at How do I use posting policies in a course? 

That is a completely separate functionality than the "Display Grade As" option in an online assignment, How do I create an online assignment?
