Is there a way to "clean up" the files in a course? I want to delete all of the unnecessary files but don't want to do this one file at a time. Too time-consuming. Or is there a way to delete all of the files and then rebuild the files that I want in a current course? This would make copying to next year much easier.

You can open the "Files" section, hold Shift (or CRTL) to select multiple files
To restore a file that you have deleted, you can go to https://yourschool.instructure.com/courses/(course ID)/undelete

If you are not a Canvas admin at your school, have a conversation with them to ask about possibly purchasing a product from Cidi Labs called "TidyUP". It does exactly what you want...cleans up unused files and folders in your course...along with course content pages. In my former role as a Canvas admin in higher ed, we purchased this product, and it really helped when I was doing course builds. Here's a link to their site:
