When creating a fill-in-the-blank question in a new quiz, how do I change the default text match to "Exact Match". Either in a course or even at a quiz level? Some quizzes have 25+ blanks, and it would be nice to have them default to exact match instead of having to choose that from the dropdown 25+ times. Thanks

You mean a regular fill-in-the-blank and not fill-in-multiple-blanks right? Unfortunately it defaults to the top option which is "contains" and there isn't yet a setting to default it to "exact match" Technically, it is an option but you would need to have that custom coded.
I highly suggest checking out the ideas and themes page as it has been reformatted to get real improvements from users and suggestions like this. Engineers are already implementing ideas that have been suggested: https://community.canvaslms.com/t5/Canvas-Ideas-and-Themes/ct-p/canvas-ideas-themes?tab=identified
