Great questions; thanks for sharing them. Speaking of sharing a new feature is available in Canvas to "direct share" content with another Canvas user, if your admins have enabled it.

You can export a specific quiz(zes) and provide those by email or usb drive. How do I export quiz content from a course? They would need to import the quiz(zes into their course. https://community.canvaslms.com/docs/DOC-12783-415241324
To do a "backup" of your course, you would export it. How do I export a Canvas course?
