making a quiz give full credit if at least one question is answered correctly?

We have a professor who's looking to have multiple questions on a quiz for a specific reading but only require the students to answer one of the questions correctly.  I'm pretty sure the only way to do this would be to manually grade the successful quizzes as full credit, but is there a way I'm missing to have Quizzes automatically mark a submission as full credit with only one correct response?

I think you are right in your assumption that using manual grading is the only way you could go about this. I'm not aware of any settings or options in Canvas Quizzes (Classic or New) that would automatically assign full credit for a single correct answer.
