I have students submit PDF files for their work, some times the resolution is large and I can't zoom out enough to easily see the page. Can you please allow the canvas speed grader allow me to zoom out more to easily read documents with high resolution in PDF form? thanks.

This sounds like you'd want to suggest a new idea for Instructure (the company that makes Canvas) to implement in the core Canvas product. There is a separate space here in the Community to submit your ideas. You can check out the instructions on how to do this by looking at the "Ideas and Themes" section of this page: Instructure Community Guide - Instructure Community (canvaslms.com).
I know this doesn't completely answer your question, but I hope it provides some insights as to how to suggest new ideas that might be implemented in Canvas.
