The quizzing portion of Canvas Studio is a permission that needs to be enabled by your school's Canvas administrator. I'd recommend having a conversation with your Canvas admin or your school's Online Learning / eLearning / Distance Education team to see if they would be willing to turn this on for you and the other instructors at your school.
