We need a way to display just text in New Quizzes like we did with old quizzes. It should not be that difficult. As it is now, if I want to add an example question or other information, I have to add a pointless question like "Do you see the example? yes/no - just so students can see the info. Anyone know of a way to do this (besides just the directions at the top of the quiz)?

I think these are your options:
- use the instructions at the top of the page
-- to keep the instructions on hand for students to refer back to, either keep the questions all on one page or allow backtracking.
- use the stimulus (or the rce for a question) to add the text/example (or image, slide deck, video, link, etc.) and attach the questions that go with that text
Since it is a quiz, the text must be relevant to a question or set of questions. Otherwise, what would be the purpose of it in the quiz? Can you give an example of when you would add text not relevant to the questions in the quiz?

Are your questions in item banks and do you have the ability to edit them? We discovered that our faculty did not have the ability to manage banks, so we edited the permissions for the role. If you bank the questions, then you should be able to associate them with particular stimuli/examples without needing the dummy questions (i.e. "Can you see this?").
I am not certain this answers the first part of your question, but I still think the solution to the second part is to use the stimulus and then find the questions for which the example would be relevant and just say something like, "This example will help you solve questions 1-5."
Using banks will let you store the items and then recreate quizzes for your worksheets.

I came across your post here in the Canvas Community and thought I would try and offer you a possible solution.
To confirm, the New Quizzes engine does have the Text (no question) question type, unfortunately.
However, have you checked out the stimulus option in the New Quizzes engine yet? This is pretty cool way to provide the students with content such as an embedded image or video that can have questions associated with it. Another huge time saver with Stimulus content is that you can also have it randomly pull questions from an Item bank.
Below is a screenshot from my sandbox course where I have embedded an image and YouTube Video in the Stimulus and attached questions from an Item bank.
Feel free the experiment with this option!
