Hi @gentryguymon Welcome to the Canvas Community!

You do that with your Course Cards on the Dashboard, or in Course Settings (although some schools restrict the permission to change a course name).

To do from Course Cards on Dashboard check out https://community.canvaslms.com/docs/DOC-10588-4212717404 Keep in mind when you do it from here, you students can change that name on theor own dashboards.
