If you're still having this issue, you can type MI for missing. You can also enter that into the "default grade" using the 3 dots at the top of the score column, and it will enter missing ...
I know this is an old question and you may know by now, but you should be able to view other terms if you click on the "apply filters" button and then select a different grading period.
It's not a total solution (the same one I'm wanting), but at the top of each assignment you can set the default grade to "mi" and it will mark all blank scores as missing.

That seems to have fixed the issue, but it also makes it so my usernames, emails, and addresses no longer appear... It would be nice if Google could fix that. Or maybe it's something Canvas could ...
