I am wondering if there is a way to turn off the red color in the grade book when a student has a permitted extension to turn in the assignment late?
Would it work to "differentiate" the assignment and change the due date just for that student so it would not show as late? (How do I assign an assignment to an individual student?)
Patty Kunkel - Just for the sake of clarification, are you asking to disable the late/missing labels entirely for certain students, or to change the color of the label?
There is not currently a way to change/disable the label, but there has been a lot of discussion surrounding it. Laura Gibbs has done a great job of collating the feature ideas that have already been put forward to change the behavior of this feature - Gradebook is still broken; hoping for a response. Please vote up and/or add comments to those linked feature ideas if you'd like to see a change to how it works.

Thanks for noticing this one Tracey DeLillo : this is another good use-case that the Canvas people should study to make sure everybody has the controls they need. This sounds like an example of another situation where there would be good reasons for the teacher to go in and manually remove the label as needed, even if there is not an automated solution.

I marked Linnea's response as correct because differentiated assignments are always a good solution for managing student assignments individually.
Additionally, if you follow the Release Notes space, you'll see that the Canvas Beta Release Notes (2017-09-25) indicate we've made a change for the student Grades page and submission details page. This change applies to anyone not currently using the New Gradebook as part of the New Gradebook Focus Group (as announced at InstructureCon). Hopefully this change will also help resolve your concerns as you encounter student situations that need individual attention.
