This is such a specific question: Why is my profile picture not showing on the Announcements page? In my Sandbox, I have the same photo on my Profile and Announcements pages - but when I copied from Sandbox to my actual course, the photo no longer appears on the Announcements page, just a green circle with a "U."

You answered your own question without knowing you did. The reason it is showing up in your sandbox and not your actual course is because you did not actually post the announcement in your actual course. So when the copied announcement is imported into your actual course it does not retain who posted the announcement from your sandbox. It has always been this way ever since I stared using Canvas many years ago now.
Thank you for the fast response! I've been all through the site, looking for every Edit or Post option I can find and still can't see how to make it show up. My Announcement shows in Student View - so doesn't that mean it's posted??

Yes the announcements will still be posted, it just won't show your picture or name next to the announcement.
So exactly how do I get the photo to post to my actual course??
I don't see any information about that - I've published and posted every option I can find.... I'm not understanding what I'm missing.

If you want your photo to show up next to an announcement in your course you will need to enter the announcement within the course. There is not a way to get your picture to show up next to an announcement that was copied over from another course even if you were the one to enter the announcement in the other course you're importing content from.
