How do I set up attendance to count/list the number of absences rather than counting %?
This is somewhat of a tricky situation. It does not allow you to count or list the number of absences in the gradebook. You can change the point value from 100 to whatever you like. My recommendation for faculty, who are wanting to use attendance as a grade or extra credit, are to set up the point value to the number of times you meet in class. For example, if the class meets 32 times, set the point value to 32. Then, at the end of the semester, the number should reflect how many times the student is present out of the 32 times (i.e., 29 out of 32).
Also, if you are wanting to just keep track of the Attendance, but not for a grade, I advise faculty to have to put the Roll Call Assignment in an Assignment Group by itself, and weight the Assignment Group at 0%. How do I add an assignment group in a course?
This may not work best for your situation. We have had several issues with the Attendance Tool, and I recommend, along with the Canvas Guides, to set your point value in the beginning and not alter because that can cause major issues.

Unfortunately, in my class the results are erroneous.
I am setting the roll call to 9 points. I set the "Display Grade as" : points. However, the result is out 100 and not out of 9!
