These two resources discuss RCE table accessibility: Table Accessibility in Canvas and New and Improved Rich Content Editor HTML Cheatsheet.

Creating accessible tables in Canvas got much easier when the accessibility checker was added to the RCE. Now you can create a simple data table then run the checker to easily add a caption and row and/or column headers.
