When copying content from one course to another, or importing a Course Export, all assignments show up in the gradebook automatically. However, if we change the Display Points As status to Not Graded, it removes it from the gradebook. This is useful to avoid cluttering the gradebook with everything up front. Is there any way to edit this status in bulk? Right now, I have to go into each assignment to change this setting.

Nope, currently not possible in Canvas.
You could submit this as an Idea Conversation in this community, but I am not sure it is needed. Many folks have asked that when importing content, then copied content should come in unpublished, and that would solve your problem for you, I think.
