Sorry to see that your question has been sitting out here without an answer for many months. There is no function of Canvas that I am aware that tells Canvas to display your e-mail address on a page of content. What you could do, though, is create a new page in your sandbox course, add any contact information to that page, and then designate it as the "Home" page for your Canvas course.
