First set up your item bank(s) with more questions than will be needed on the quiz.  https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-create-an-item-bank-in-New-Quizzes/ta-p...  If you have multiple topics, make a separate bank for each topic.

Then insert from the bank into the quiz a set number of randomly selected questions from each bank: https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-add-all-items-or-a-random-set-from-an-i...

The result will be a different set of questions every quiz that still cover the necessary topics.  This way students can retake the quiz.
