Is there a way to set a minimum F of 50% for any attempted auto-graded assignment? I know we can set a 50% for any missing assignment - but that isn't what I need.

I am not entirely sure what you mean, but you can create a grading scheme in Canvas, and you can set Canvas to record letter grades for assignments instead of points. However, there are no auto-graded assignments in Canvas, only auto-graded quizzes and only for specific question types that lend themselves to auto-gradeing like multiple choice, true/false etc. These guides will help,

Then finally, a curiosity question - What grade is lower than an "F"?

I think they have the same problem I have.
I want to input the students actual grade for an assignment, say 2 out of 10 points.
However, due to DEI rules, my lowest score stops at 50%, Min F.
So we want Canvas to automatically change my 2/10 to a 5/10.
Somehow we need to be able to actually record the "real" score of the student...a Min F gives the impression that they performed better than they actually did.
Or...an override mechanic for their total grade to step in when their true score is <50%.
So if a student ends up with a 38% overall in class, the override would replace their true score with a Min F/50%.
That might save the true data while also letting us comply with DEI.
We could always do it ourselves and add comments, but it's tedious.
