I know how to make a video using canvas studio.  May I know if it is possible to insert a quiz in the video?

Yes, you can add a quiz to a video that you've added to your Canvas Studio library.  There are only a few question types that are available to add to your videos, however.  When a student watches the video, it will stop wherever you inserted a question, and the student would have to answer the question that appears on top of the video.  Here are the Guides that you'll want to take a look at:
